If you haven't noticed, we are crazy for coconut in all of its forms and in ice-cream is no exception.
Here is our favourite (and easy) recipe for yummy coconut popsicles that will make you feel like you've escaped to a tropical paradise. All you need is 4 ingredients and some popsicle moulds.
- 400ml Can of Coconut Cream
- 1/3 cup Maple Syrup
- 1 cup Shredded Coconut
- 1 tsp Vanilla Extract
- Add the can of coconut cream, maple syrup and vanilla extract to a jug and combine well with a whisk.
- Add in the shredded coconut to the jug and gently stir to combine.
- Divide the mixture amongst the popsicle moulds, insert the popsicle sticks and pop in the freezer. They will be ready to eat in 4 hours or when frozen.
